Zesty Quinoa & Spirulina Salad

This salad not only tastes great, but is hearty enough and full of protein and nutrients that its more like a meal.  We've kept the dressing pretty simple, but feel free to add your own dressing. 

                                                                                                                                               

1.  Cook Quinoa:

  • Cook 1 cup of quinoa until soft
  • Cool quinoa in fridge while preparing items below

2.  Add in bowl:

  • 2 cups chopped greens
  • 1/2 medium diced red onion
  • 1 long English cucumber diced
  • 1/2 bunch chopped cilantro
  • 1 diced orange bell pepper
  • 1 cup of black beans
  • 1 cup of corn
  • 2 tsp of spirulina powder
  • 1 tbsp of sunflower seeds or hemp seeds
  • Season to taste salt and pepper
  • 2 tsp of lemon juice
  • 2 tsp of extra virgin olive oil
3.  Add quinoa in bowl and mix
